My previous post on teakaapi received the maximum number of views on the blog only next to my Chicken Dum Briyani post. People sent positive feedback and appreciations and I could see that they were able to relate themselves to what I had written. As a blogger, what more you could ask for? So, to celebrate that, I decided to bake something nice 🙂
Recently, I have been failing at baking, one of my cakes turned out inedible and the other day brownies came out like chocolate biscuits! I wanted to give all that I can to bake a decent cake, at the same time was scared to even attempt thinking of the past. Also, I realized that baking is not only following the recipe and measuring every ingredient right. It involves a few other things which will have a real effect on what you bake.
Lessons learnt from a few burnt cakes –
- If you’re a beginner at baking (like me), just follow the recipe that you decide to follow without any modifications. Don’t expect that your cake will come as good as you see on the recipe on the Internet or cookbook. It will take some real practice but eventually you (we) will get there.PERSEVERANCE is the key here!
- You have to keep a check on the expiry dates of your baking powder and baking soda because older they get, harder your cakes will be.
- Understand your oven. I use a OTG and most of the recipes I follow are based on convection oven. OTG takes time than a convection oven and the heat might not get evenly distributed like the latter because there is no fan option.
- Sieve all the dry ingredients together at least twice than mixing with hands. This will help in even baking.
- Don’t bake when you are having a bad day! Yes this is a fact, at least to me. Bake only when you have that time, energy and the liking to do so.
Okay, with all that gyan, you ask what did I bake? I baked a simple cinnamon cake. Here is how I went.
What you need
- 1 cup all purpose flour + 1 cup wheat flour
- Cinnamon powder – 2 tbsp
- Sugar – 2 cups (I used brown sugar)
- Vegetable oil or Canola oil – 1/3 cup
- Yogurt or homemade thick curd – 1 cup
- Baking powder – 1/2 tbsp
- Baking soda – 1 & 1/2 tbsp
- Water – 2/3 cup
- Chopped nuts (optional)
- Pre-heat the oven to 200 degrees. Oil the baking tin or line with parchment paper and keep aside.
- Sieve all the dry ingredients once or twice in a bowl.
- Add water, oil and sugar to another bowl and mix until the sugar dissolves. I used an electric hand mixer to do this.
- Add the dry ingredients mix to the wet ingredients little by little and mix to combine.
- If you see the batter getting thick, add water and bring it to dripping consistency.
- Add the chopped nuts, if using and give a final mix.
- Pour the batter to the tin and bake until a skewer or toothpick inserted comes out clean. I had to shift between the lower and middle racks of the oven to avoid the top layer getting burnt.
- Cool it down on a wire rack.
